Busy Day Recipes: 2 ingredient Coconut Chicken

This is my most basic go-to meal. It has 2 main ingredients and then a few optional spices. How much easier can it get than that? I serve it with roasted veggies (recipe coming soon) and if we want baked potatoes or sweet potatoes. Both of which are super easy. In short if I stock the ingredients I can have a meal on the table in 30 minutes made from frozen ingredients and pantry staples!




2 Ingredient Coconut Chicken

Ingredients
Chicken (use enough for each person to have a serving and have some leftovers. I use boneless skinless chicken breasts, but any cut would probably work. Frozen chicken totally works for this, just needs a little longer to cook.)
Coconut oil (use a small dab (~ 1t) on each breast or cut)
Optional: any spices or flavoring you would like (my favorite is lavender and lemon juice)

Directions:
Place chicken in a pan with sides.
Dab coconut oil on top. 
Add any seasonings desired 
Bake until no pink is left in the middle (a higher temperature will make it done quicker, a lower done slower) 
Or if you are making the roasted veggies put in on the bottom rack and put the oven and it will cook while the veggies are broiling.


This recipe is paleo, AIP, gluten free, grain free, dairy free, legume free, soy free, egg free, fish free, shellfish free, nut free, peanut free, sugar free, and delicious!

DIY How to Make Your Own Pumpkin Puree on the Stove - Fall Fun and Howling Halloween Linky Party

Can I tell you a secret? I don't really like pumpkin. I have never really cared for pumpkin dishes. I don't like pumpkin pie, or cookies, or bread (although i have a recipe for pumpkin bread that I don't really mind and everyone else raves about). Anyways even though I don't care for pumpkin, I love toasted pumpkin seeds, and Mr. Random loves all things pumpkin. So I buy whole pumpkins and puree them to use in pumpkin recipes and toast the seeds for myself (Mr. Random doesn't like the seeds). It works out really well for us. And I actually kind of the whole process of making pumpkin puree. It is satisfying.

Pumpkin puree can be used for a lot of things. You need it for pie, and bread, and cookies. And you can also use it for baby food. It is great to make your own so you know what is in it (mine is just pumpkin and a little water) and you can spice it however you want for your recipe, not just have it taste like whatever they put in the can. I like to freeze mine in 1 cup increments so I can just pull however many bags (cups) I need out of the freezer and not have to worry about thawing too much or too little. This way my husband can enjoy yummy pumpkin treats all year round. (I told you about this in my pumpkin bread recipe).

Here is the best resource that I have found for making your own pumpkin puree. They have several techniques for cooking pumpkins. I went with oven cooking this time because that is my personal favorite. I have also cooked pumpkins in the microwave and on the stove. Both methods work but take a little bit more watching and you can fit more pumpkins into the roaster pan so if you are doing several pumpkins at once it is actually quicker to cook them in the oven. Or to do all 3 at once :)

Anyways on to the recipe.



How to Make Your Own Pumpkin Puree


Supplies Needed:
Pumpkin (I would go with pie pumpkins, I have tried both pie pumpkins and big pumpkins and pie pumpkins have a better flavor and texture, are less watery, and surprisingly have more seeds)
Spoon
Food Processor (if you don't have one you can probably use a food masher, blender,or something like that, I have never tried anything else so I can't tell you what else would work best)
Roasting Pan (or cake pan, but a roasting pan is easiest)
Aluminum Foil (or a lid for your pan, I don't have one so I use aluminum foil)


Directions:
Wash your pumpkin. Whenever you cut into a fruit or vegetable you should wash the outside even if you won't be eating it because whatever is on the skin will be transferred into it when you cut into it with the knife. Sorry about the bad picture. The screen on my camera is broken so I can't see my pictures until I get them on the computer. I usually just take a bunch of pictures and hope one of them comes out, but none of these did.
 Cut the pumpkin in half.
 Scrape out the seeds and goopy stuff.
Place the two halves of the pumpkin cut side down in the roasting pan and fill with about 1 inch of water. As you can see I could have fit another pumpkin or two in the pan, I usually cook more than one at once, but I didn't do the others because they were not quite as ripe as I like (This one turned out just fine even though it was a little unripe, so don't worry they still work then). I just wanted to get one done so I could get pictures for you guys.
Separate the seeds from the goopy stuff and put them in a bowl. Add water to cover.
Cover your pan with aluminum foil. Make sure you get it all covered. You want the steam to cook the pumpkin and keep it moist. Cook at 350 for 30-90 minutes (The time is different for each batch, keep checking the pumpkins every 10 minutes or so until they are done. They are done when a fork inserted through the skin slides in easily, see the picture below)
 Rinse the pumpkin seeds.
Spread the pumpkin seeds out to dry (I think it would be better to skip the paper towel or switch them over to a plate afer they have dried a bit. I left them on the paper towel for a couple days and the paper towel stuck to them and wouldn't come off until I got them wet again). This step is not at all necessary if you are toasting the pumpkin seeds the same day. If that is what you are doing then just rinse them off and cook them however you do it (I boil my seeds before toasting so I would put them in a sauce pan with water and salt, but toasting pumpkin seeds is another post). If you are not toasting your seeds the same day you can store the seeds dried out for a couple days, but don't store them wet because they will probably either rot or sprout (I stored mine because I was also roasting watermelon seeds and cantaloupe seeds and wanted to do them all together so I was waiting until I was done collecting the seeds).

When the pumpkins are done cooking uncover and let them cool down for a little while so they are cool enough to touch them.
The pumpkin will most likely be pretty much falling off the skin at this point, but if it is not uuse a spoon to scoop it out.
Place pumpkin in blender and puree until smooth. This one didn't need any more water, but if yours is dry just add some water until it is a nice, smooth, creamy consistency.
Measure out one cup and put it in a small plastic bag (If you have reusable freezer containers that would work too).
This one pie pumpkin made 4 cups of pumpkin puree and the little bit in the ramekin in the last picture.
Put the little bags into a big freezer bag (make sure you do this, the little bags were not meant for freezing food)
I kept out the little bit extra for Little Man. He loved it :)

Friday Fascinations 7 - Everything Linky Party - Chocolate Peanut Butter Crescent Rolls

This week we are going to do an everything linky party. You can link up anything that you have been working on, thinking about, writing about, whatever. Literally any post of yours that you would like to share with my readers link it up!

Today I am going to share with you one of the easiest snacks i have ever made. I found this picture on pinterest and decided to recreate it. I made it for a carry in meal at a friend's house. I chose it because I didn't have a lot of time and I needed something I could make pretty quickly. This fit that bill and it was also super yummy!




Chocolate Peanut Butter Crescent Rolls
 
Ingredients:
  • Crescent Rolls
  • Peanut Butter 
  • Chocolate Chips

Directions:
  1. Unroll crescent rolls
  2. Spread peanut butter on crescent rolls
  3. Sprinkle chocolate chips on peanut butter
  4. Roll up like crescent rolls
  5. I added a dab of peanut butter and a chocolate chip on top so that people would know they weren't just crescent rolls, this is optional, but it makes them look cute! :)
  6. Bake according to package directions (You can add a few minutes to the cooking time if it looks like they need it)
Verdict:
That's it. How easy is that? And these are super yummy! They are great for making ahead and serving later. They are yummy warm, but they are even better the next day. I tried these warm and later that day and the next few days and they were great each time!

Friday Fascinations 2 - Olympics Linky Party - Slow Cooker Moroccan Beef Stew

This week I thought it would be fun to see all the projects that people did for the Olympics. Kind of an Olympics recap party.

My husband is a huge Olympics fan. I am not so much a fan. I don't like sports at all (Mr. Random doesn't usually like sports either but the Olympics is the exception for him) We like to enjoy things together as much as possible so I planned to contribute to the Olympic celebration in my way. I had planned to make meals from different countries several times throughout the Olympics times. I even made a special Olympics board on Pinterest for this project. As it turned out I didn't have time to make as much as I wanted to. There was one recipe that to me was my Olympics recipe. I knew that I had to  make it at some point during the Olympics. That recipe was Slow Cooker Moroccan Beef Stew. I don't know why this recipe stood out to me so much, but it did so I did end up making it. I had decided that I did not want to spend a lot of money on special spices that I would never use again. This recipe called for two spices I didn't have and am pretty sure I have no need of, garam masala and yellow curry powder. So I got on google and did some research. I found a recipe substitute for garam masala and one for curry powder (couldn't find yellow curry powder) and I improvised from there.


Slow Cooker Moroccan Beef Stew

Ingredients:
2-3 lbs of beef, cut in cubes (I used what I had in the freezer)
Olive Oil
1-2 c carrots chopped
The original recipe called for onions, I didn't use any because I can't stand onions
Garlic, turmeric, cumin powder, coriander powder, chili powder, ground pepper, ground cinnamon, ground cloves, ground nutmeg (Sorry, I don't have exact measurements for any of these. I just sprinkled on a generous portion of each of , I used a double portion of cumin and coriander because they were in both spice recipes)
1 can tomato paste
Enough water to fill the crockpot
1 can chick peas (drained and rinsed)
1/2 c raisins
1/2 c chopped dried apricots
1/4 c slivered almonds (toast in oven for 3-5 minutes)
Cilantro leaves if you have them (garnish)


Directions:
The night before, or the morning before saute beef over medium heat in olive oil. Cook thoroghly then remove from pan.
Add carrots and garlic (and onions if using). Saute. Add spices and tomato paste. Stir to combine.
Add beef, carrot mixture, and water to slow cooker.
Cook on low for 6-8 hours.
Stir in chick peas, raisins, and apricots. Cook for 1 more hour.
Toast almonds in oven. Serve with rice. Sprinkle almonds and cilantro on top.


Verdict:
It was ok. Not the greatest thing ever. To be honest even with all those spices it was a little bland. Definitely needed some salt. I accidentally cooked the fruit way too long so it got really mushy, i don't know if that part would have been any better. The meat was not bad with salt, rice, and the toasted almonds (they actually did add a lot to the dish). The carrots had a slightly weird flavor and the broth was plain. It smelled better than it tasted. Bottom line, I probably won't make this again, but if I do I would add a lot of salt and make sure not to overcook the fruit. It was worth a try and we did end up eating all the meat, but probably won't happen again.

Mini Fruit Pizzas

This is actually one of the first things that I pinned for my sister's shower (well this and the towel cake). I love this idea. I love fruit pizza but it can be a little difficult to serve neatly or individually. And as an added bonus these mini fruit pizzas are super easy to make. Possibly one of the easiest things that I made for the shower. The hardest part is putting them together. The ones I made were not quite as cute as the originals because we ran out of time before the shower to get everything together (the downside of hosting a shower on a Sunday at 2:00 at a church) so we only had time to put blueberries on them. I had planned to put strawberries and kiwi on them too. Also I had a lot fewer of these than I had planned to have because I dropped the container on the way into the church and spilled about half of them on the sidewalk :( . Oh well, that's life right? Things don't always turn out exactly how you want them to but they can still be good. And these were good, very good. So give them a try and see how they work for you!



Mini Fruit Pizzas
(recipe made from looking at this picture)

Ingredients:
  • Sugar Cookies
  • Cream Cheese Frosting
  • Fruit (any type of fruit that you like on fruit pizza. Any berries are great, kiwi is good, several others are good too)

Directions:
 
  1. Bake sugar cookies. I used store bought cookie dough because I knew that I had to cut a few corners in order to get everything done. If you have time and desire you can make these cookies from scratch using your favorite sugar cookie recipe. I personally would probably go ahead and use store bought cookie dough because I do not think that I make the best cookies, but you can use whatever you prefer.
  2. Make or buy cream cheese frosting. I made my own because I was already making it for the Nutella Brownies. Otherwise I would have bought a can of cream cheese frosting and it would have worked out fine. Here is my recipe for Cream Cheese Frosting, if you want to use it.
  3. Cut up the fruit if needed
  4. Frost the cookies
  5. Arrange the fruit on the cookies
  6. Enjoy! They are super yummy!

DIY Sugar Cubes (partial fail)

I made a lot of stuff for my sister's shower. A lot of stuff. And most of it turned out good, really good, or fabulous. But a few things did not turn out as I expected. This was one of them. I am sharing it with you because that is just the way I am. I like to share my failings as well as my accomplishments (well some of them :) .

I found this recipe for DIY sugar cubes. They are absolutely adorable and I thought I would make them for the shower. They were super simple to put together. Less than 5 minutes!



Ingredients:
1c Sugar
1 1/2 T Water
Flexible ice/candy tray (fun shapes recommended)


Directions:

Mix sugar and water. Start with less water and add to it until it is the right consistency. You want it to still be grainy but wet enough to manipulate.
 Press into molds
Let dry. This is the part where my project failed. The original post said theirs dried overnight. Mine were nowhere near dry. I was curious so I left them sitting out to see how long it took them to dry. Two weeks later they were still wet. Well the white sugar ones were still wet. The brown sugar ones had dried after a couple days or a week I think. I used 2 T water for the white sugar cubes and 1 1/2 T water in the brown sugar cubes. That is part of it I think. Also the trays I used were technically candy molds and they were not flexible enough to get the sugar cubes out until they were completely dry. I now have a silicone ice cube tray. I am thinking about trying this again. If I do I'll let you know how it turns out.

The brown sugar ones turned out pretty cool!

DIY Flavored Water (Strawberry Watermelon and Three Citrus Water)

I did a lot of blog browsing to find great recipes to use for the bridal shower. One of the recipes I found was for flavored water. I thought that this was a genius idea that I had to try. It is so unique and pretty. I thought it added an extra touch of fanciness to the shower.
I am not super into flavored water. I actually like the taste of plain water (I love well water, yes I know I am weird). I prefer either full flavor drinks or plain water. I don't really care for watered down drinks. But for flavored water this is pretty good. I enjoyed it.
I made two types of flavored water Strawberry Watermelon and Three Citrus. You could make whatever flavors sound good to you. You could recreate your favorite flavored water with just a few ingredients!

DIY Flavored Water

Ingredients:
Fruit (1-2 c per container whatever type is in season or that you like)
Ice
Water
Glass Jars or pitchers
Utensil to press on the fruit


Directions:

Cut Strawberries up, put in glass container and press a little with utensil.
 Add watermelon and repeat
 Add ice
 Add water
 For the citrus water put in the fruit and press.
 Again add fruit and water.
Refrigerate overnight.The next day strain out the fruit. Taste and see if it is to your taste.
I thought the waters were a little strong so I watered them down. I sweetened the citrus water with honey and sugar because it was a little bitter.


They came out looking beautiful and tasting good. I personally preferred he strawberry watermelon water because it was naturally sweet and I find the rinds of the citrus fruits to add a little too much bitterness.
